Experiments with Cheese Cake!

Triple Chocolate Cheese Cake

Ingredients:
Good Day Biscuits – 3 packets
Ghee/Butter – 2 tablespoons
Gelatin Powder – 2 teaspoons
Sugar – 100 gms
Cream – 300 ml
Cream Cheese – 200 gms
White Chocolate Block – 200 gms
Dark Chocolate Block – 200 gms
Brown Chocolate Block – 200 gms

Recipe:
-          Crush the biscuits in a mixer. Mix them well with ghee or butter to form the crust for the base of the cake.
-          Spread the biscuit mixture on the base of the pan and on the sides. Let it set for 15 minutes in the freezer.
-          Heat two tablespoons of water and add gelatine powder to it.
-          Mix cream cheese, cream, sugar and gelatine powder. Blend the mixture and divide the liquid into three parts.
-          Melt the white chocolate block. Mix the first part of the blended mixture with the melted chocolate.
-          Layer this mixture on the biscuit base. Let is set for 15-20 minutes in the freezer.
-          Repeat the previous two steps for the remaining two blocks of chocolate in a sequential manner.
-          Add choco chips or strawberries on top for decoration purposes.

Important Tips for Beginners:
-          You need a baking bowl with a removable bottom. Don’t try with a usual vessel, the cake will just stick on to the vessel and will not come out clean.
-          Setting time should be increased to 30-45 minutes if we refrigerate at the usual temperature and not in the freezer.
-          Do not heat the chocolate blocks directly in a vessel; they could burn. Keep the vessel in another vessel containing boiling water and melt slowly.
-          Before adding second and third layers, check if the previous layer has solidified. Else, the layers could mix with each other.
-          Chocolate blocks are available in the market, I was quite foolish to use Milky Bar and Dairy Milk in my first try; it ended up being an expensive affair.

-          Do not use cream biscuits or chocolate biscuits for the base as they do not provide complimentary taste to the chocolaty taste of the cheesecake.
